Hi there,

The last salad of the week is an Asian salmon salad with a wasabi-dressing. Sounds weird, tastes delicious – I swear!

What you need: IMG_5838

Green salad of your choice

1 tomato

a piece of cucumber

½ avocado

100g of salmon in sushi-quality (in this recipe it is raw but you can cook it)

¼ of mango

Sesame seeds

For the dressing:

1 tsp wasabi-paste or I prefer powder because it doesn’t expire that early

2 tsp peanut oil

2 tsp rice wine vinegar

juice of 1 lime

Salt

How to:

Cut the cucumber and tomato into slices. Then cut the avocado into halves, take the avocado stone out, peel it and cut it into squares.

Cut the mango into halves beside the stone and take out the pulp of the mango with a spoon and cut it into squares, too. Mix everything in a bowl, also the salad.

For the dressing squeeze the lime and mix all the ingredients together and pour it over the salad.

The salmon should be skin- and boneless. Preheat the pan and give some oil in the hot pan. Add the salmon to it and roast it on every side 30 seconds. After that, cut it on a cutting board into thin slices.

Place the slices on the salat and sprinkle some sesame seeds on top. Ready to serve.

Have a nice and tasty day,

Laura
