the second dish of the one-pot week is a lemon chicken with rice and carrots. A different dish to your everyday meals and really easy to prepare.
What you need:
4 chicken thighs
2 -3 carrots
1 organic lemon
1 tsp onion granules
1 tsp oregano
1 tsp paprika powder
1 tsp smoked paprika powder
1 clove of garlic
3 tbsp olive oil
Mix the chicken thighs in a sealable bag with the olive oil, onion granules, oregano, paprika, smoked paprika, juice of half a lemon and the crushed clove of garlic and let it soak in the fridge for 1 hour.
In a pan, fry the chicken thighs with the skin side down until they are golden brown. Dice the onion and add them to the chicken. If the onions are brown, add the rice and fill with water according to the instructions.
Slice the remaining lemon and place them on the rice and chicken thighs.
Season with salt and pepper. Cover with a lid and cook until the rice has absorbed all the water.
If necessary, season with salt and pepper and serve.
