chia seed pudding is a wonderful dessert which is low in calories but still satisfies your cravings for something sweet.  Personally, I try to substitute milk whenever I can and that’s the reason why I always make my chia seed pudding with almond milk. This is why it’s low in calories because unsweetened almond milk has only 14 calories per 100ml.

Also, chia seeds have some awesome health benefits like they are high in fiber so you don’t get immediately hungry after eating it. Furthermore, they are high in protein and antioxidants. So they are a real superfood!

 

What you need – 1 serving:

50 ml unsweetened almond milk

1/2 tsp coconut sugar

10 g chia seeds

for the topping:

a few nuts (I used brazil nuts)

dried fruits without added sugar (I used mulberries and blueberries)

 

How to:

Mix the chia seeds with the almond milk and the coconut sugar in a small glass. Leave it for 2 hours or overnight in the fridge but seal it with a lid.

When the chia seeds have soaked up the almond milk top it with some nuts and dried fruits.
