Perfect for the plum season the Plum Week has started. The first recipe is an easy tart with a meringue topping. The lightly sour plums with the sweet meringue are incredibly delicious and look fantastic together.
What you need:
for the dough:
for the filling:
20g sugar (depends on how sweet the plums are)
1 Tsp cinnamon
zest of 1/2 orange
1 Tsp lemon juice
for the meringue:
3 large egg whites
150g powdered sugar
Knead the cold butter with the sugar and flour until it forms a dough. If it won’t stick together add some tablespoons water. Wrap the dough in some foil and put it in the fridge.
Cut the washed plums in half and remove the seed. Mix all plum halves with the sugar, cornstarch, cinnamon and the zest of the orange.
Press the dough into the pan and add the plums.
Bake for 15 min on 180 C.
During the tart is baking whisk the egg whites until they are stiff. Add the powdered sugar and sugar into the egg whites and mix until it forms soft peaks.
Fill the meringue into a piping bag and pipe it how you want it.
Bake the tart for 30 min on 120 C and ready is a fancy tart you impress your friends and family.
