Hey Taste-Explorers,

the last recipe is really different to all other ones I did before. Bacon itself is just incredibly tasty but with sweet plums which caramelize is even more delicious. Also, Polenta baked in the oven is a perfect sider for every dish, trust me!

What you need:

20 plums

100 bacon finely sliced

for the polenta:

1/2 L water

140g Polenta

3 eggs

250g cream

salt

How to:

Wash the plums and cut from the top to the bottom and take out the seed. Try to keep them intact so that you can wrap them easily with the bacon. Each plum has to be wrapped in one slice of bacon and peek through a skewer.

For the polenta bring the water with some salt to a boil and add the polenta to it. Let it cook until the polenta soaked up all the water. Let the mixture cool down for 7-10 minutes.

Whip the cream to a soft peak, as well as the egg whites. Mix the yokes, the whipped cream, and the beaten egg whites into the polenta.

Spread the polenta on a baking tray which is sprayed with baking spray or baking paper. Give it into the preheated oven for 45 minutes at 180 C.

Meanwhile heated a pan and put the wrapped plums into it. If the bacon stick to the bottom add a little bit of oil but normally the bacon has enough fat to fry in its own fat.

When the bacon is crispy enough, put the pan with the plums into the oven for 10-15 minutes.

When everything is ready to serve drizzle the juice of the plums over the polenta and it’s ready to eat.
