Hey Taste-Explorers,

It’s Pumpkin season and pumpkin is perfect for a warming soup for fall!

What you need:

1 medium-sized pumpkin (I prefer butternut pumpkin)

1 big onion

2 medium to big potatoes

2 Tsp Oil

salt and pepper to season

1 bouillon cube

How to:

Peel the pumpkin if you can’t eat its peel. Cut it in 3-4 cm big cubes.

Repeat this with the potatoes. Peel the onion as well. Cut it in half and 8 pieces.

Preheat a pot and put the oil in. If the oil is hot add the onion with some salt. When the onion is brown and soft add the potatoes as well as the pumpkin.

Fill the pot with enough water to cover half of the ingredients.

When the pumpkin cubes and potatoes are soft mix it. If the soup isn’t enough liquidity add some more water.

Season to taste and there you go!

Have a nice and tasty day,

Laura
